Ingredients

135 g dried figs
35 g raisins
65 g rum
160 g apple puree
q.s. grated zest of one lemon
35 g Peeled almonds bio
35 g walnuts
100 g granulated sugar
30 g candied fruit
65 g vegetable oil
10 g baking powder
200 g Wheat flour type 00 nr. 2 bio

Preparation

  1. In a bowl, soak the diced figs, raisins, and grated lemon zest in the rum, and set aside while you prepare the rest of the mixture.
  2. Using a whisk, mix the apple puree with the oil and sugar. Then add the flour and baking powder and stir until well combined. Add the roughly chopped dried fruits and candied fruit, then finally mix in the figs and raisins with their soaking liquid.
  3. Grease a 20-22 cm round cake pan and pour the mixture into it. If you like, decorate with a pattern of almonds and walnuts, then bake the Zelten at 170°C for about 40 minutes (always check with a toothpick).

Note: You can either buy ready-made apple puree or make it yourself by cooking an apple with a spoonful of sugar and blending it. You can also replace the dried fruits with those of your choice.
