Preparation

Tip: You can vary the ingredients as you like and use other vegetables or sauces.
- Place the lukewarm water in a bowl. Mix the spelt flour with the Lievito Madre and add it along with the olive oil and salt to the water. Knead everything for about 10 minutes on low speed (1st level). Cover the dough and let it rise for 60 minutes at room temperature.
- Slice the zucchini into thin slices and grill them in a pan or on the grill. Salt and pepper the zucchini to taste. Wash the salad thoroughly, spin it dry, and cut it into strips. Halve the tomatoes and slice them thinly. Crumble the feta. Slice the onion into fine rings or grate it.
- Once the dough has risen, divide it into 4 equal portions. Roll each portion into a thin flatbread and place them on a baking tray lined with parchment paper. Cover the flatbreads with a tea towel and let them rise for 30 minutes at room temperature.
- Preheat the oven to 220°C (top and bottom heat) and place a baking tray inside to heat it properly. Mix the egg yolk with 1 tbsp of water and brush the flatbreads with it. Sprinkle with sesame seeds. Carefully transfer the flatbreads using the parchment paper onto the hot tray and bake for 20-25 minutes with some steam in the middle of the oven until golden brown. Let the flatbreads cool after baking.
- Mix the natural yogurt with ketchup, garlic powder, and kebab spices. Taste and season with salt and pepper.
- Cut a pocket into each flatbread. Fill it with salad, grilled zucchini, tomato slices, onion rings, and crumbled feta. Drizzle generously with the döner sauce and serve the vegetarian döner immediately.
