Preparation
- Place the mix and water in a kneading machine and knead until a smooth dough is obtained. Let the dough rise, covered, for about 45 minutes at 24 °C.
- Meanwhile, season the tomato sauce with olive oil, salt, and oregano.
- Roll out the dough on a floured surface with a rolling pin to a thickness of about 1 cm. Spread the tomato sauce over the entire surface of the dough, setting aside about four tablespoons.
- Roll the dough from the bottom up and cut into 12 rolls with a large knife. Grease a muffin tin with 12 cavities with oil. Place the dough rolls in the cavities with the cut side up.
- Season the rolls with a bit of the reserved tomato sauce and top each with a mozzarellini, cherry tomato, and olives.
- Bake the pizzamuffins in the preheated oven at 180 °C for 15-20 minutes.
- Remove the pizzamuffins from the oven, let them cool for a few minutes before removing from the tin. Garnish with fresh basil and a bit of oregano.
