Ingredients

For 2 panettone of 500 g

500 g Mix leavened pastries glutenfree
50 g Honey
25 g Fresh yeast
2 Eggs
2 Egg yolk
375 g Water
100 g Butter
100 g Candied fruit
50 g Sultanas

Preparation

  1. Mix all the ingredients, except the candied fruit and sultanas, in a mixer with paddle attachment at medium speed for 5 minutes. Just before the end, add the candied fruit and sultanas. 
  2. Put the batter into a panettone mold (approx. 350 g). Cover and leave to rise for about 60 minutes at about 30°C, however, until doubled in volume. Brush the surface with milk or water.
  3. Bake in a static oven preheated to 170°C (ventilated oven 150°C) for about 40-45 minutes.
