Ingredients

500 g Khorasan Kamut ® Bio wheat flour
30 g ADAM - lievito madre natural yeast with dry yeast
275 g Water
10 g Salt
35 g Olive oil

Preparation

  1. Knead flour, lievito madre and water for approx. 4 min. Add salt and continue to knead for approx. 4 min. Add the oil and continue kneading until the oil is absorbed.
  2.  Form two loaves, grease them with oil and leave them to rise covered on a surface also greased with oil for approx. 30 min. at 27 °C. Cut the loaf into strips of the desired weight (e.g. 15 g), roll into breadsticks, place on a baking tray and leave to rise for a further 60 min. at approx. 27° C.
  3.  Bake in a preheated oven at 200°C (static oven) for approx. 15 minutes.
