Ingredients
For 1 baguette (approx. 700 g)
500 | g | LA SPEZIATA - Wheat flour type 2 |
370 | ml | water |
50 | g | EVA - Lievito madre natural yeast bio |
10 | g | salt |

q.s. | thyme, rosemary, oregano | |
q.s. | herb butter |
Preparation
- Mix the soft wheat flour with the water and Lievito Madre. Add the salt and chopped herbs. Knead the ingredients together for approx. 5 minutes until a smooth and uniform dough is obtained. Cover and set aside for approx. 5 hours at room temperature.
- After the resting time has elapsed, gently work the dough and shape into a baguette form. Set aside for a further 30 minutes. Preheat the oven (static: 220°C, fan: 200°C).
- Bake the baguette in the oven for approx.15-20 minutes until the surface is crunchy and golden. Remove from the oven and slice whilst it is still warm. Fill with a little herb butter and other herbs.
