Chocolate Ganache | ||
250 | g | Dark chocolate, VALRHONA 66% |
150 | g | Cream |
Preparation
Preparation for the Muffins:
- Roughly chop dark chocolate and melt it in a hot water bath. Beat butter with sugar until creamy. Stir in egg and egg yolk. Mix flour, salt, and baking powder. Add the flour mixture to the butter-sugar mixture along with milk and mix well. Quickly and vigorously fold in the melted chocolate.
- Fill muffin cups with the batter.
- Bake in a preheated oven at 190°C for about 15 minutes. Let them cool on a rack.
- For the chocolate ganache, roughly chop the chocolate and place it in a heat-resistant bowl.
- Heat the cream in a small saucepan. Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes, then stir into a smooth cream. Allow it to cool, then cover and refrigerate for about 2 hours.
- Whip the ganache with a hand mixer or kitchen machine for 4-5 minutes until light and fluffy.
- Transfer it to a piping bag with a large star tip and use it to decorate the carnival muffins.
- Optionally, decorate with Smarties and chocolate sprinkles according to your preference.
