Ingredients for 8 pizza

1000 g SIROLO - for gluten-free pizza
720 g Water
32 g Fresh Yeast
70 g Olive oil or sunflower oil
27 g Salt
36 g Sugar

Preparation

KNEADING* Knead all the ingredients in a kneading machine at medium-high speed for 6 minutes.

SHAPING Roll out the dough in a baking tray (60x40). Spread with tomato sauce.

PROOFING Leave to rise at 32-33°C for 60 min. or until doubled in volume.

BAKING* Bake in oven at 230-240°C for 26-28 min. Last 5 min. with the valve open. Add the mozzarella and bake for another 2-3 min.
