1 | carrot | |
1 | tomato | |
1 | zucchini | |
3 | tablespoons | capers |
3 | tablespoons | caper vinegar |

q.s. | fresh mint | |
q.s. | olive oil | |

170 | g | feta |
1 | tablespoons | sugar |
Preparation
- Soak the red wheat for 12 hours. Then cook it in the soaking water for 30-40 minutes without salt, until the wheat is soft. Season with salt just before the end of the cooking time.
- Peel the carrot and cut it into small cubes along with the zucchini. Sauté in a pan with a little olive oil until slightly browned. Season with fresh thyme leaves, salt, and pepper.
- Peel the cucumber and cut it into small cubes along with the tomato. Finely chop the fresh mint.
- Cut the feta into cubes. In a non-stick pan, melt the sugar over medium heat. Once it begins to caramelize, add the feta cubes and briefly fry until golden and caramelized.
- In a large bowl, mix the cooled red wheat with the cucumber, tomato, carrot-zucchini mixture, capers, and caper vinegar. Season with olive oil, salt, and pepper.
- Divide the salad onto plates and sprinkle with the caramelized feta cubes. Garnish with fresh mint and thyme leaves.
