Ingredients for 8 mini ciabattas
500 | g | Soft wheat flour type 0 no. 2 |
35 | g | ADAM - lievito madre natural yeast |
430 | g | water |
10 | g | salt |
q.s. | durum wheat semolina |
Preparation
- To prepare the mini ciabattas, place the flour in a bowl along with the ADAM Lievito Madre Natural Yeast with dry Yeast. Pour in the lukewarm water and mix roughly using a spoon or your hands. Add the salt and continue kneading until you obtain a homogeneous but rather sticky dough.
- Cover and let it rest for 25 minutes, then perform stretch-and-folds directly in the bowl: with damp hands or a spatula, take a portion of the dough, stretch it upwards, and fold it towards the centre.
- Rotate the bowl 90 degrees and repeat the process. Continue until you have completed a full round.
- Cover the dough and let it rise for 75 minutes, performing a round of stretch-and-folds every 25 minutes. In total, you should do four rounds. After the last one, let the dough rise for another 25 minutes.
- Dust your work surface generously with durum wheat semolina and gently transfer the dough onto it. Sprinkle the dough with more semolina.
- By stretching the dough or pressing it lightly with your fingertips, shape it into a rectangle of approximately 25 x 40 cm.
- Using a dough scraper or a sharp, floured knife, cut it in half lengthwise, then divide each strip into four smaller rectangles.
- Transfer the rolls onto a baking tray lined with parchment paper, spacing them slightly apart, and leave to rise for another 25 minutes.
- In the meantime, preheat the oven to 230°C (static). Once the oven is hot, pour half a glass of water onto the oven floor to create steam and bake the ciabattas for about 20 minutes, until golden brown on the surface.
- Halfway through baking, open the oven briefly to release the steam. Remove the ciabattas from the oven and let them cool.
