Ingredients

Ingredients for approx. 30-40 biscuits

3 tablespoons Flour for biscuits and shortcrust pastry
3 eggs
250 g sugar
140 g chocolate
250 g Hazelnuts Bio
2 tablespoons rum
1 tablespoons honey
1 teaspoon cinnamon
140 g breadcrumbs
q.s. Powdered sugar

Preparation

  1. Break the chocolate into small pieces and melt it carefully. You can do this by placing it in a bowl over a pot of simmering water (double boiler) or microwaving it in short intervals, stirring occasionally until completely melted and smooth.
  2. In a large mixing bowl, beat the eggs with the sugar until the mixture is light and creamy. A hand mixer or stand mixer at medium-high speed works best to achieve a fluffy consistency. Gradually add the melted chocolate to the egg-sugar mixture, stirring to combine well. Add the ground hazelnuts, flour, rum, honey, and cinnamon, and mix thoroughly. Finally, add the breadcrumbs and stir until you have a fairly thick, moldable dough.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This will allow the dough to firm up, making it easier to shape into balls.
  4. After the dough has chilled, preheat the oven to 140°C fan.
  5. Form walnut-sized balls from the chilled dough. It helps to slightly dampen your hands to prevent sticking. Roll each ball thoroughly in powdered sugar to coat.
  6. Place the balls on a baking sheet lined with parchment paper, leaving some space between each one. Bake in the preheated oven for approximately 25 minutes at 140°C. The balls should be slightly firm on the outside but still soft on the inside. After baking, remove them from the oven and let them cool on the baking sheet.
