Ingredients

For approx. 50 pcs.

250 g Flour for biscuits and shortcrust pastry
250 g Icing sugar
250 g Cubed butter, chilled
3 Egg yolk
60 g Powdered cocoa
15 g Vanilla sugar
FOR THE FILLING & DECORATION
120 g Dark chocolate 50%
100 g Strawberry jam

Preparation

  1. Place the butter, flour, icing sugar, vanilla sugar, egg yolks and cocoa into the mixer. In short pulses, mix together all the ingredients until well-incorporated. Compact the dough with your hands and then form it into a loaf shape.  Wrap the dough in plastic film and refrigerate for about 2 hours. 
  2. Cut the dough into biscuits approx. 5 mm thick. Place them on a baking tray lined with paper. 
  3. Bake in a preheated static oven for 8-10 minutes at 180 °C. Allow to cool on a wire rack. 
  4. Break up the chocolate and melt in a bain-marie. Spread some strawberry jam on one biscuit and pair it with another. Dip half the biscuit into the melted chocolate and place on baking paper until the chocolate has set.
