Ingredients
For approx. 50 pcs.
250 | g | Flour for biscuits and shortcrust pastry |
250 | g | Icing sugar |
250 | g | Cubed butter, chilled |
3 | Egg yolk | |
60 | g | Powdered cocoa |
15 | g | Vanilla sugar |
FOR THE FILLING & DECORATION | ||
120 | g | Dark chocolate 50% |
100 | g | Strawberry jam |
Preparation
- Place the butter, flour, icing sugar, vanilla sugar, egg yolks and cocoa into the mixer. In short pulses, mix together all the ingredients until well-incorporated. Compact the dough with your hands and then form it into a loaf shape. Wrap the dough in plastic film and refrigerate for about 2 hours.
- Cut the dough into biscuits approx. 5 mm thick. Place them on a baking tray lined with paper.
- Bake in a preheated static oven for 8-10 minutes at 180 °C. Allow to cool on a wire rack.
- Break up the chocolate and melt in a bain-marie. Spread some strawberry jam on one biscuit and pair it with another. Dip half the biscuit into the melted chocolate and place on baking paper until the chocolate has set.
