170 | g | Rice flour bio glutenfree |
170 | g | Cornflour white glutenfree |
150 | g | Sugar |
170 | g | Butter (or vegetable margarine) |
2 | Eggs | |
2 | Pears | |
pinch | Salt | |
q.s. | Soaked sultanas | |
q.s. | Walnuts |
Preparation
- In a small saucepan, cook the chopped pears with a pinch of sugar.
- Cook the eggs as if they were scrambled. Mix the hard-boiled eggs with the sugar and butter. Add the rice flour, corn flour and a pinch of salt. Continue kneading until the mixture is smooth. Wrap in cling film and leave to rest in the refrigerator.
- Grease the mould. Divide the dough into two parts and roll each one out thinly between two sheets of baking paper. Line the baking tin with the dough up to the edges and press. Distribute the caramelised pears, walnuts and sultanas. Then cover with the second disc of dough and prick the cake several times with a fork.
- Bake in a preheated oven at 170° static oven (150°C ventilated oven) for approx. 40 minutes. Once cooled, dust with icing sugar.
